I’m not a big fan of quinoa, but I know how healthy it is so I try to eat it from time to time. This blueberry quinoa porridge is my favorite recipe.

• ½ cup quinoa
• 1 cup almond/rice/coconut milk
• 1 tsp honey
• ½ tsp vanilla extract
• a dash of cinnamon (optional)
• ½ cup fresh or frozen blueberries
• toppings (whatever you prefer)

Combine all the ingredients in a saucepan and cook until the quinoa absorbs all the liquid and has a creamy consistency. Serve with more milk and toppings.
