I don’t know why, but I hate pears. I’d rather have some broccoli (or any other vegetable that kids usually hate) than eat a pear. But recently I discovered baked pears taste completely different for some reason.

Don’t worry, the whipped cream is healthy too


× one pear
× 1-2 tsp coconut oil
× ¼ cup hazelnuts
× a dash of cinnamon

For the whipped cream you’ll need:

× 250 ml canned coconut milk (look for one that is high-fat and high-protein)
× a few drops of vanilla extract
× ¼ cup greek yogurt (for some extra protein)
× 2-3 tbsp honey or your choice of sweetener
× 1 vanilla bean


Preheat the oven to 180°C/ 350°F. Cut the pear in half and use a spoon to scoop out the seeds and core. The coconut oil and hazelnuts will go into the cavity you’ve created. Sprinkle with cinnamon and bake until golden brown.

In a large bowl combine coconut milk, vanilla extract and the seeds from your vanilla bean. Use an electric mixer to mix everything together until soft peaks form. Add the greek yogurt and mix gently until everything is combined. Store in the fridge until ready to serve.
