This casserole is one of the best things I had for breakfast lately and it’s loaded with protein and healthy fats to keep you full for at least 4 hours. For this recipe, you only need 5 ingredients that you probably already have in your pantry. It’s also really quick to make, but if your mornings are very busy you can make it the night before and take it with you at work. It can be enjoyed both warm or cold 🙂




× ¼ cup canned chickpeas
× ¼ cup diced tomatoes
× half an onion
× 1 tsp minced garlic (optional)
× 2 slices ham
× one egg



Rinse your chickpeas in cold water and let them drain. Dice the tomatoes (unless you’re using canned tomatoes), chop or slice the onion and cut the ham in small squares. Preheat your oven to 180°C/350°F and grease your casserole dish with olive oil. Combine the chickpeas, tomatoes, onion, garlic and ham and season with salt, pepper, herbs (I used rosemary) and whatever spices you like. Break an egg on top and bake until the egg white is set. Enjoy!
