I’m so glad I live in a world where there are Octobers.’- Anne of Green Gables

     Me too Anne, me too. Especially when I wake up and treat myself to these pumpkin spice pancakes and a cup of coffee. The thing I love the most about this recipe is that there is REAL pumpkin in it, not just pumpkin spice. FUN Fact: pumpkin spice does not contain pumpkin. But no worries, there is plenty of it in these pancakes so you can spoil your taste buds.

Ingredients:

× ½ cup roasted and blended pumpkin or pumpkin purée
× 2 eggs
× 1 cup oats
× 1 tbsp non-dairy milk (almond, coconut, hazelnut, oat, rice, etc.)
× 1 tsp or tbsp pumpkin spice, your choice
× a pinch of salt
× a dash of vanilla extract
× coconut oil (if you do not have a non-stick frying pan)

Directions:

Blend all the ingredients in your blender and cook your pancakes for about 1-2 minutes on each side. Yeah, it’s that simple! Enjoy them with pumpkin seeds and a drizzle of maple syrup or honey. 🍁🍂
