Yup, you guessed it. Another recipe that involves eggs. I can’t help it, you know? I mean eggs are amazing. They are versatile, you can use them pretty much for any meal and in a lot of dishes, they are high in protein and rich in essential vitamins and minerals, and they are delicious!! If you’re a sunny-side up lover like me, you’ll fall head over heels for this recipe.

Start by cutting some mushrooms and tomatoes in thin slices. Next, heat some olive oil in a pan and add your mushrooms, oregano, salt, and pepper to taste and sauté them for about 5 minutes. Remove them from the pan and add the tomatoes, some basil, minced garlic, salt, and pepper. Drizzle them with some more olive oil and let them cook uncovered until they get that smokey brown color underneath. While the tomatoes are cooking, use another pan to cook your sunny-side up egg. Next, spread some pesto on your tortilla, add the mushrooms and the tomatoes, place the egg on top and sprinkle some sesame seeds, more oregano and basil, salt, and pepper. Dig in!
